The indication of such feature should be a Rolex watch on the able dealer's wrist.
Of course that would be accompanied by a certain recurrent player on his/her shifts.
I don't know about percetages, but how many dealers do you see wearing that Rolex?

As it would take too many years of practicing, and in all those years, some dealers may have died before achieving success, changed jobs, didn't make, gave up.... I would say this skill is rarity. 1 in 1000 is my guess.
