Some years ago I saw a demo of predicting horse-racing results by
this method. Very impressive but of course requires input of a lot
of info -- which seems, from your post, something that wouldn't
bother you.

It does not matter what currency you use as you want a overall perspecitve over your gambling.
Just write 1 or 10 or 100 Euro and if lower bet you just write 0.1 0.2 0.3 and so on ...
I use the Euro sheet.
And upload each complete month to my google drive account.
